Chicken Veg Skewers
Baked Chicken & Vegetable Skewers. Effortless yet amazing & no oil required. A healthy lunch or a light dinner.
This is for 1 serving of baked chicken and vegetable skewers. Rub a paprika spice mix onto 150g of raw chicken pieces. Slide onto skewers with half a zucchini, half a large red capsicum (pepper) and half a large yellow capsicum. Bake in moderate oven on baking paper (so no need for oil) for 20 minutes turning once. Squeeze fresh lemon when serving.
150g chicken breast
75g each of red and yellow capsicum
Paprika spice mix (or spice of your choice)
For the perfect meal, serve with Rainbow Salad (but no more than half a serving of the salad because the salad serving sizes are substantial as a whole meal themselves.
If you’re adding chicken skewers, you’ll need to half the amount of salad to stay within a good portion size).
