Chick Pea Salad
Chick pea salad is a seriously healthy, high fibre meal (or side) with a balanced nutrition composition. This recipe serves 1. If you want to make it for 2 people, double it, for 3 people, triple it etc.
Even when you eat healthily, it is still important to watch your portion sizes if you’re wanting to lose weight. This is a very filling serving size so it’ all you need for light lunch or dinner! If you want chick pea salad as a side, have a third of the serving.

Chick pea salad can very easily be made vegan.
Chick Pea Salad
104g drained chick peas (if you like fry in a pan with no oil to give them a bit of crunch)
96g cooked beetroot (canned baby beets is what I used)
96g cherry tomatoes
80g baked sweet potato (need to bake on high for at least 40min until soft)
32g feta cheese (buy the low-fat smooth one – it crumbles)
25g rocket or spinach
Chop the leaves finely and all other ingredients into small cubes. Sprinkle with pepper and squeeze some lime juice on just before serving.
